Italian Knots with an Easter Twist

Every Christmas and Easter my Grandmother would make batches and batches of her Italian Knots.  They have always been my favorite cookie and I am so glad that she taught be how to make them.  This year I am adding a twist to the traditional knot cookie and shaping the dough into the shape of a bunny!

4 cups flour

1 cup sugar

4 eggs

½ lb. butter (2 sticks)

1 tablespoon vanilla extract

5 teaspoons baking powder

pinch of salt


Melt butter, add sugar, eggs, vanilla, baking powder, and salt…slowly add flour.  Chill dough in refrigerator for an hour.  Form knots or bunnies and bake on ungreased cookie sheet at 350 degrees for about 10 minutes.


Mix confectioner’s sugar, a drop of vanilla, and warm water until you get the consistency you want (I like my icing on this thick side).  Dip tops of cookies into icing and add sprinkles!  EnJoY!

Weight Loss: What Works For You?

It’s that time of year…people start panicking about losing weight before they hit the beach.  With the swimsuit season quickly approaching, what works best for you to KiCk those last few pounds?

I’ve been debating this answer all week.  Is it going through the cupboards and throwing out all of the junk food?  Is it giving up pop?  Fasting for a day or two?  Running a mile a day?  Starting a new diet?


I finally got my answer last night:  Wear clothing that makes me feel skinny.  When I wear my “skinny clothes” I eat well.  If I wear an oversized t-shirt and mesh shorts I might as well be holding a bag of Oreos, because that is what I will turn to after I look in the mirror!  To be honest, I only found one or two outfits that made me feel GoOd.  Since I am limited on these outfits, I may only wear them in the evenings (when I struggle the most with eating) or, better yet, this may mean I need to go shopping! :)

I realize that my answer may be different from yours, which is just another point I want to make:  Every person has to come up with their own weight loss plan because every person has a different body and circumstance!  Don’t get frustrated because you are trying to follow the same plan as your co-worker or friend and the results are different.  If giving up sweets causes you overcompensate later then agree to eat (and enjoy) one cookie every day.  If you hate working out, maybe you need to decide to redo all of landscaping in your yard so you can burn calories while you are doing something you love.

Do whatever it takes to keep you on track.  YOU need to be the one that creates a weight loss plan that is tailored specifically for YOU.  Don’t feel like you have to follow someone else’s rigid plan!  Take bits and pieces of the weight loss resources available and customize a plan that works specifically for you.

JaNiCe, mother of four always loved to bake. She was constantly baking cakes & cookies, as well as other goodies.   In fact, her SuGaR CoOkiEs were so popular that people had standing orders for these delicious treats.   It wasn’t uncommon for Janice and her crew to make 100 dozen cookies on the holidays.   The whole FaMiLy assisted in the project in assembly-line fashion.  Even DaD helped frost the cookies.

While Janice was the one who loved to bake, daughter, LiSa, was the one with an entrepreneurial bent. She worked in the restaurant industry and had a DeSiRe to have her own restaurant where she could call the shots. When a storefront on Main Street with a kitchen came available, she talked her mom and sister GaiL into taking the plunge. The three opened up DoWnToWn SwEetS aNd SaNdWiCh ShOp.  From time to time when sister HeiDi, an O.R. nurse, isn’t working you may see her helping out.  And brother ClaY, well, his role is taste tester!

Downtown Sweets and Sandwich Shop sells homemade goodies such as cakes, cookies and CuPCaKeS, and they also serve lunch. Their hours are: 11:00a.m. – 5:30p.m. Monday – Friday.  You can also check them out on Facebook.
