Cucumber Salsa

This Cucumber salsa is a hit no matter where I take it!  A great way to use up the abundance of cucumbers from your garden!  Very flavorful and colorful!

What you need:

3 cucumbers

1 Can Diced Tomatoes

1 Can Rotel

2 Tbsp finely chopped fresh cilantro

1/4 C. White Vinegar

2 Ranch Packets

Chips (or you could eat it with a spoon!)

Take the skin off of the cucumbers and cut them up in small pieces.  Add your chopped cilantro.

Throw in the diced tomatoes and Rotel (or you can replace the diced tomatoes with another can of Rotel if you want it spicy!) Add your 2 pkgs of Ranch and vinegar!

Stir it together and VoiLa!!  It becomes more flavorful the longer it sits, so I suggest making it early in the day if you plan to eat it that night!

Super Easy Spinach Ball Recipe

I tried these spinach balls at a Christmas party and just had to get the recipe.  They were DeLicIoUs and I was thrilled to find out how EaSy they were to make!  They are now my “go to” recipe when I need to bring an appetizer anywhere and am short on time!

Spinach Balls Recipe:

  • 2 10 oz. packages of frozen chopped spinach
  • 2 cups of dry stuffing mix
  • 1 cup of grated Parmesan cheese
  • 6 eggs beaten
  • 1/2 cup soft butter
  • salt and pepper to taste

Cook spinach and drain well.  Combine all ingredients.  Chill in refrigerator at least two hours.  Roll into one inch balls.  Place on cookie sheet.  Bake at 350 degrees for 10-15 minutes or until slightly browned.

Easy Black Bean Party Dip

Need a new idea for a dip/appetizer for your Holiday parties?  You MuSt try this one! It is so EaSy to make and is always a crowd pleaser!

1 can shoe peg corn

2 cans black beans – drained

1 bunch green onions (scallions) – chopped fine

1/2 cup red onion – chopped fine

1 medium green pepper – chopped fine

1 jalapeno pepper – chopped fine   * I don’t put this in mine

1 clove garlic – minced

Kraft zesty Italian dressing

2 bags Large Fritos

*Can be made 1 day in advance
